Weekend Recipe : Chicken Shawarma Home Style

Ingredients:

  • 1 kg skinless chicken thighs cut into thick strips (4 strips per thigh)
  • 4 tbs plain yogurt
  • 1/4 cup vegetable oil
  • 1 juice of 1 Lemon
  • 4 crushed garlic gloves
  • 3 tbs white vinegar
  • 1/4 tsp white pepper
  • 1/4 tsp Lebanese 7 spice
  • 1/4 tsp sweet paprika powder
  • 1/4 tsp ginger powder
  • 1/4 tsp cardamom powder
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1 bay leaf
  • 1 cinnamon stick

Method:

Mix all the ingredients all together then add the chicken making sure it is well coated in the mix. Keep in the fridge for 2 hours minimum (preferable overnight) then cook in the oven, frypan, on skewers or a BBQ.

When cooked, place on Lebanese bread with a red onions, cos lettuce, tomatoes, fries and Lebanese garlic paste (recipe coming soon).

Pickles and pickled chilies optional.
